Set aside. In a separate container, combine salt, garlic, onion, dried rosemary, black pepper, Bahian seasoning, paprika, chimichurri seasoning (if using), bay leaves, and lemon juice. Mix well. Add bacon cubes, placing them into the holes made in the pork leg. Cover the container and refrigerate for 12 hours to marinate. After the 12 hours, transfer the pork leg (and the marinade) to a baking dish lined with aluminum foil and drizzled with olive oil. Drizzle the pork with olive oil, cover with aluminum foil, and bake in a preheated oven at 200°C (392°F) for about 1 hour and 30 minutes to 2 hours (or until it's cooked). Sprinkle salt over the skin of the pork knuckles and place them in the preheated oven for approximately 20-30 minutes, or until the skin is golden and crispy. Step 4: Prepare the Sauce While the pork knuckles are in the oven, strain the reserved liquid from the pot into a clean saucepan and let it boil over medium-high heat for about 10-15 minutes, or until it reduces and becomes a thicker sauce. It also featured incredible performances by renowned artists like Luan Santana and Clayton e Romário. Frivatti made its presence felt throughout the event, with a specially prepared space to welcome its guests, especially the integrated producers of Frivatti Agro and Frivatti Genetic. These producers were offered enriching lectures that greatly contributed to their agricultural activities. The importance of family pig farming was emphasized, highlighting its resilience in the face of numerous challenges. In addition to the significant presence of producers, our space welcomed numerous municipal and state authorities, as well as visitors from the entire region. We took the opportunity to introduce all the companies that make up Frivatti. Frivatti Ind is responsible for the meatpacking unit, while Frivatti Genetic operates in the Gene Dissemination Unit (UDG), the Sow Production Units (UPM), and some Weaner Production Units (UPD). Frivatti Agro handles feed production and manages several Weaner Production Units (UPD), along with Nursery Units and Finishing Units. The event was a resounding success, strengthening our presence in the region and paving the way for future partnerships.
