Ingredients:
3 kg of pork leg roast
1 tablespoon of salt
8 cloves of minced garlic
1 medium onion, chopped or minced
1 teaspoon of black pepper
1 teaspoon of Bahian seasoning
1 teaspoon of sweet paprika
1 teaspoon of chimichurri seasoning (optional)
Juice of 2 large lemons
Dried rosemary to taste
Bay leaves to taste
Olive oil to taste
Instructions:
In a large bowl, place the pork leg and make holes all over the meat. Set aside.
In a separate container, combine salt, garlic, onion, dried rosemary, black pepper, Bahian seasoning, paprika, chimichurri seasoning (if using), bay leaves, and lemon juice. Mix well.
Add bacon cubes, placing them into the holes made in the pork leg.
Cover the container and refrigerate for 12 hours to marinate.
After the 12 hours, transfer the pork leg (and the marinade) to a baking dish lined with aluminum foil and drizzled with olive oil.
Drizzle the pork with olive oil, cover with aluminum foil, and bake in a preheated oven at 200°C (392°F) for about 1 hour and 30 minutes to 2 hours (or until it's cooked).
