Ingredients: Creamy Pork Rice

  • 1 lb (500 grams) pork tenderloin

  • 1 onion

  • 1 carrot

  • 1 garlic clove

  • 5 Roma tomatoes

  • 2 cups of rice

  • 1 cup of cream cheese spread

  • 1 teaspoon smoked paprika

  • 6 cups (1.5 liters) vegetable broth or water

  • Fresh parsley or cilantro, to taste

  • Olive oil, to taste

  • Salt, to taste

  • Black pepper, to taste

Instructions:

  1. Cut the pork tenderloin into cubes and season with salt and black pepper.

  2. In a heated pot, add olive oil and sear the pork until golden on all sides.

  3. Once browned, add the onion, carrot, and garlic, and sauté until softened.

  4. Add the tomatoes and stir until they break down.

  5. Stir in the rice and sauté for a couple of minutes.

  6. Pour in the vegetable broth, then season with salt, black pepper, and smoked paprika.

  7. Cover the pot and let the rice cook until it’s al dente.
